OmeletteOmelette is one of those foods you can just make when you’re out of ideas, out of time, or simply have loads of random ingredients lying around. However it seems like something as basic as omelette actually changes from country to country!

There isn’t anything special about my omelettes, but I thought I could write down how I make one so other people can take a peek :)

Recipe: Ham & cheese omelette, Rui’s style

Summary: A portuguese-style omelette

Ingredients

  • 4 eggs
  • small onion, minced
  • 100g ham, cut in cubes or small pieces
  • 200g grated cheese (any cheese than can melt will do, this time I used 100g normal yellow cheese and 100g cow&sheep cheese)
  • sweet corn
  • chopped bell pepper
  • chopped parsley
  • salt

Instructions

  1. Crack open the eggs into a bowl and jumble them up
  2. Add all the ingredients and stir well
  3. Add salt as you like, be mindful of the saltiness of the cheese and ham you added before
  4. Add some oil to a large frying pan and let it heat up well
  5. Add the mix to the pan and let it cook until the egg is uniformly cooked where it touches the pan
  6. Fold some of the mix onto the center and let it cook a couple of minutes. Try to not let it leak!
  7. Fold the other side onto the center and wait a couple of minutes
  8. Now you should have a semi-rectangular, semi-cooked omelette. Turn it upside down and wait 5 minutes
  9. Take it from the frying pan and onto a plate with some kitchen paper (to soak the oil)
  10. You can serve with some salad, toast, crisps, rice or whatever you feel like!
